Ingredients:

4 moongdal papads4

1 medium onion finely chopped

salt to taste

1/2 cup cottage cheese grated (paneer)

2 green chillies

2 tblsp coriander leaves finely chopped

1 capsicum finely chopped

oil (if frying) to fry

1 tsp chaat
for stuffing
How to make paneer bhare papad :

  • Halve the papads.
  • Prepare the stuffing by mixing all the ingredients together.
  • Roast the papads, one piece at a time.
  • While they are still hot roll to make ½" diameter cylinders.
  • Spoon in the stuffing carefully and serve immediately.
  • Alternatively apply little milk or to the whole papad, put the
    mixture on one side and roll cylindrically, deep fry in hot oil and
    serve.

Dahi Vada Recipe


Ingredients :

1 cup urad dal
1 inch piece minced ginger
2 tsp finely sliced coriander leaves
2 green chillies minced
1 tsp baking powder
2 cups nicely churned curd
1 tsp garam
1 tsp roasted ground cumin seeds
¼ tsp pepper powder
Salt and chilli powder to taste.

Prepration Method:
Soak dal overnight in . Next morning, drain and grind to a fine paste over the grinding stone.
Mix in baking powder, chillies, ginger, coriander leaves, salt and chilli powder and knead to a smooth mixture.
Shape the mixture into small round wadas or balls.
fry the vadas a few at a time to a golden brown colour.
Drain and then soak them for 15 minutes in water.
Squeeze out the water and place them in a deep glass dish.
Then pour beaten curds over the top.
Sprinkle garam masala, pepper, ground cumin seeds and chilli powder over the top before serving.

Rajmah (Red Kidney Beans) Recipe

250 gms Rajma
1/2 tsp Turmeric Powder
1 Onion Chopped
5 Garlic Cloves Chopped
1 Inch Ginger Chopped
3 Green ChilliesChopped
3 Tomatoes Chopped
1/2 tsp Corainder Powder
1 tsp Red Chilli Powder
1/2 tsp Garam
2 tbsp Cooking Oil

Prepration Method :

* Soak rajma overnight. Wash and pressure cook the rajma. Keep aside.
* Heat oil in a pan, add ginger, garlic and chillies. Fry until they turn brown.
* Add onions and tomatoes. Cook until masala separates from oil.
* Add salt, turmeric powder and mix well.
* Add the boiled rajma, red chilli powder, corainder powder, garam masala and stir.
* Simmer the flame and cook until a thick gravy is formed.
* Remove from fire. Garnish rajma with corainder leaves and serve hot with chapatis or rice.

Aloo Tikki

Ingredients
6 potatoes
1/4 tsp green chilli paste
1/4 tsp garam
Salt as per taste
1/2 cup bread crumbs
1/4 tsp turmeric powder
1/4 tsp ginger paste
Oil for frying

Method: Microwave potaoes for 7 mins. Peel and smash the potatoes. Mix in potatoes rest of the ingredients except oil and make small patties. Heat oil in a frying pan and fry till golden brown and serve hot with wafers.
